These squares are topped with a blend of berries, coconut and lemon, and provide a delicious mix of sweet with just a hint of tart! They are perfect for spring or summer, but can definitely be enjoyed all year round!
The squares were a little difficult to cut perfectly, so the presentation of this dessert isn’t quite as high as I would like (as I’m all about making my desserts look nice). I’ll have to experiment and see if I can solve this issue next time. However, the taste definitely makes up for the appearance.
I tend to favour desserts that are really chocolatey or have a strong vanilla flavour, rather than fruit-filled desserts. Regardless, I still found these squares to be quite tasty, and I really enjoyed the combination of lemon, coconut, and berries. I made these specifically to give to my mom to serve to a group of her friends, and they gobbled them up and asked for seconds! Next time I’ll have to make a bigger batch!

Another thing to note: Although the recipe said to bake the crust for 10 minutes, mine still hadn’t turned golden at this point. I only kept it in the oven a minute or two longer before removing it, because I didn’t want it to over bake. The entire dessert will go back into the oven for 40 minutes afterwards, so this wasn’t a huge issue.
