While trying to come up with creative baking ideas for Valentine’s Day this year, I decided to put a spin on the traditional Oreo-style sandwich cookie. While the original plan was to make basic sugar cookies and tint them pink, I quickly changed my mind when I came across a recipe for brownie roll-out cookies. I was really excited to try out the recipe, and thought chocolate cookies would provide a nice contrast against pink icing, so making these cookies allowed me to accomplish both tasks at once. 🙂

The one thing I would try differently next time I make these cookies would be creating an alternate recipe for the filling for the cookies. This icing was a little bit runny, and dried a bit hard, whereas I was hoping for a soft, fondant-style filling. However, I put the cookies in the microwave for about 10 seconds just before eating them, and this softened up both the cookie and the icing. It was extremely delicious!
I experimented a bit with different interior icing colours, using different amounts of food colouring in my icing. I’m not sure whether I like the light pink or the bright red better! Both contrast extremely nicely with the dark brown cookies, and both are perfect in sticking with the theme for Valentine’s Day.
