Rainbow Swirl Cupcakes Recipe

These Rainbow Swirl Cupcakes are a fun treat to bake with kids, or if you just want to make the typical cupcake a little more exciting. The cupcakes themselves are made with coloured batter, so that when you take a bite into them, you get a bright, colorful surprise! Doesn’t that look delicious?

Because of the swirly design technique used for the cupcake batter, the cupcakes actually look quite interesting when they come out of the oven, before the frosting is even applied! But the frosting adds a little bit of an extra, personalized touch to the cupcakes, which I really like.

I created the frosting using a mixture of marshmallow creme, butter, and icing sugar. This is the same frosting as I used for my recipe for the Rainbow Cupcake Bites that I uploaded a few days ago. It is very delicious, without being overly rich. In addition, the marshmallow flavour puts a nice twist on the traditional frosting that is typically used on cupcakes.

I started by spreading a layer of white frosting over the cupcakes. Then, I coloured the remaining icing with food coloring. I dropped a few drops of coloured icing over top of the white icing, and used the back of a spoon to swirl it around into a marbled design. I thought the design looked quite nice on its own, but I decided to jazz things up a little using some neon candies that I bought. The bright colours make these cupcakes perfect for spring!
