It’s Pancake Tuesday! Known by some as Shrove Tuesday, Fat Tuesday, or Mardi Gras, today is a day that people feast on delicious food. And what’s a more delicious breakfast food than pancakes?

I’m about to share with you my go-to recipe for making pancakes from scratch. This homemade pancake recipe is ten times better than the premade boxed mixes, and contains really basic ingredients that you probably already have on hand. This recipe will make around 12 pancakes that are about 6 inches in diameter.

Note: an electric mixer is not necessary for this, I just find that it helps incorporate more air into the batter and helps remove any lumps faster.

  • 1 1/2 cups flour
  • 1 tbsp sugar
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 2 cups milk
  • 1 tsp vanilla extract
  • 2 tbsp melted butter

Directions

  • Stir together the dry ingredients (flour, sugar, baking powder, salt) until well incorporated.
  • Use an electric mixer to beat the eggs until they start to foam. Add in the milk, vanilla, and melted butter and mix for 10 seconds.
  • Add the dry ingredients into the wet mixture and blend until smooth.
  • Butter a skillet and use a ladle to scoop some pancake mixture onto the pan. Hold the pan a few inches in the air and rotate it on an angle using a circular motion to allow the batter to spread out evenly.
  • When the pancake starts to brown, flip it over with a spatula. Remove from the pan when both sides have cooked.
  • Top with anything you’d like, such as maple syrup, Nutella, icing sugar, cinnamon, jam, or yogurt.

I really like the idea of crepes, but I prefer the moisture and softness of pancakes. The great thing about these pancakes is that they’re quite thin, so you can roll them up, just like a crepe! I like to spread Nutella inside, then roll the pancake tightly and cut it into little pieces. The spiral that’s created looks cute, and the pieces are small enough to eat in one or two bites!

Pancake Mix

One more great thing about this recipe is that you can make the dry mixture ahead of time. I combined enough flour, baking powder, sugar, and salt for 4 batches of these pancakes and put them into a large jar. I put a sticky note with instructions on the side, so next time I want to make these pancakes, I just need the 4 wet ingredients, along with 1 1/2 cups of the dry mix. It’s a great time saver!
