Rice Krispies Snowballs

This holiday season, I decided to start my baking earlier than usual so I would have time to experiment with different recipes. I came up with an adorable idea to make little snowmen out of Rice Krispies cereal, and to put them on sticks, similar to the way cake pops are served. I was hard at work rolling the Rice Krispies into little snowballs that I could stack together to make snowmen when I was suddenly struck with another brilliant idea. I thought to myself, “Why not roll these balls in coconut and serve them as ‘snowballs’?” And so my recipe for Rice Krispies Snowballs was born. These treats are surprisingly easy to make, and they taste delicious. I gave a few to my Grandma and she raved about them for quite some time, claiming they were the best dessert she had eaten in awhile! I’d have to agree with her, too. Of course, I love just about anything with coconut in it, but these really are tasty! Rice Krispies snowballs put a wintery spin on the typical “Rice Krispy Treats” that are so popular among moms and their children (likely for their simplicity).

You may have noticed that I am using regular Rice Krispies and not the typical holiday themed Rice Krispies (that have red and green cereal bits mixed in). Really, either type of cereal works for this recipe, I just found that plain Rice Krispies look more like actual snowballs.

You can make this recipe gluten-free, too! Simply substitute Gluten-Free Rice Krispies for the regular cereal, and follow the rest of the directions as indicated.
