Rainbow Cupcake Bites

These Rainbow Cupcake Bites are the perfect springtime treat. Because they’re so small and bite-sized, they make excellent party treats! They’re a great dessert to serve for Easter as well!

I used a lemon cake mix to make these cupcakes, so I only needed to tint the batter three different colours, as it was already yellow. I think the colours turned out very bright and beautiful, don’t you think?

These cupcake bites are formed by cutting off the “muffin top” portion of each mini cupcake. The bottom half of each cupcake should be set aside and saved for later, where you can be creative with it. In the photo below, the plate on the left contains all the muffin tops, whereas the plate on the right contains the bottom halves.

The frosting is quite possibly the most delicious part about these cupcakes. It’s a mixture of marshmallow creme, butter, and icing sugar. The marshmallow creme that I buy is sold under the “Fluff” brand and can be found near the ice cream supplies (chocolate sauce, ice cream cones, etc.) in my local grocery store. I tinted the frosting using food coloring to match the colors of my cupcakes.

The cupcake bites are assembled by taking one of the top pieces, and spreading the matching colored frosting on top of it. Then, gently place another piece of the same color on top of it, so it looks like a miniature hamburger, or a sandwich. At this stage, the cupcake bites are done, but you can go one step further to decorate them…

I bought these bright, neon colored candies which I thought would match perfectly with my cupcake bites. I stuck them onto the cupcakes by placing a drop of frosting on top of the cupcake, and pressing the candy down onto it. When the frosting hardened, the candy stuck to the top. I think these candies make the cupcake bites look extra cute, don’t you think? 🙂

The small size of these cupcake bites makes them perfect to simply pop into your mouth and enjoy in one delicious bite. Or, you can go the route of those Two-Bite Brownies (which are my absolute favorite, by the way) and savour the flavour for just a bit longer.

These are a big hit with kids, and at parties. Once you serve them, everyone will be asking for more!

And what about those leftover cupcake bottoms? Don’t let them go to waste! You can try what I did: I stacked several different coloured cupcakes on top of one another, and placed frosting in between each layer to hold them together. Then I placed a toothpick through each one, making easy to hold and easy to eat party treats!
